Grace Around My Kitchen Table

 I enjoy my family and more than anything else, I love to cook and bake whenever they are home to gather around my dining table.  Nancy has decided to have a Cloudy With a Chance of Meatballs theme for Payton's 5th birthday later this month, only problem...we've never fixed spaghetti and meatballs very much! So now, we are on the look out for a good recipe. My first stop is to check with Paula Deen on the Food Network.  Tonight was recipe #1.


Spaghetti and Meatballs
Meatballs:
1/2 pound ground chuck
1/2 pound ground pork
1 cup chopped onion
1/2 cup panko (Japanese breadcrumbs)
1/2 cup grated Parmesan cheese
2 T chopped parsley
1 T olive oil
4 cloves garlic minced
1 tsp salt
1 egg


1 8 oz pkg spaghetti or linguini


Preheat oven to 400 degrees. Line a rimmed baking sheet with aluminum foil. Place a rack inside baking sheet. Spray rack with Pam.


In a large bowl, combine ground chuck and ground pork, onion, bread crumbs, parsley, oil, garlic, salt, and egg. Stir gently to combine. Form mixture into 3 inch meatballs. Place on prepared rack in baking sheet. Bake for 20 minutes.


*I'm not sure my meatballs were 3 inches...I had 10 meatballs.


Spaghetti Sauce:
2 T olive oil
1 cup chopped onion
4 cloves garlic, minced
1/2 cup dry red wine
1 28 oz can crushed tomatoes
1 15 oz can tomato sauce
2 tsp Italian seasoning


In a large saucepan, heat olive oil over medium-high heat. Add onions and garlic; cook 4-5 minutes, or until tender. Add wine, and cook until wine is reduced by half. Stir in crushed tomatoes, tomato sauce, and Italian seasoning; bring to a boil, reduce heat, add baked meatballs and simmer for 20 minutes.


The recipe says it serves 2...but we had a lot of spaghetti, sauce, and plenty of meatballs for 6!
